Pancakes with oatmeal, Greek yogurt & forest fruits.
RECIPE (5 persons)
- 2 eggs
- 100 grams of oatmeal
- 100 grams spelled flour
- 50 grams of almond powder
- 500 grams of Greek yogurt, natural
- 100 ml (soy-)milk
- 3 tablespoons of honey
- 2 teaspoons of baking powder
- 1 packet of vanilla-flavored sugar
- cinnamon
- vanille essence
- strawberries, raspberries, blackberries, blueberries
PREPARATION
- Use a blender to make the oatmeal very fine.
- Put the Greek yogurt in a bowl and mix it with the crushed oatmeal & almond powder.
- Add 2 eggs and mix well with a beater.
- Add 3 tablespoons of honey, the vanilla sugar, 1/2 teaspoon vanilla essence and a pinch of cinnamon. Mix well again.
- Finally add the spelled flour along with 2 teaspoons of baking powder and 100 ml (soy-)milk.
- You batter is now ready. Let is rest for 15 minutes before starting to bake.
- Add a (small) amount of sparkling water to your batter if your prefer it more fluid.
- Make small pancakes (10 cm).
- Serve 5 pieces with a mixture of forest fruits and finish with a small amount of powdered sugar if desired.
